(Nearly) Wordless Wednesday with Enchilada Sauce

Cooking for one presents its own challenges.

I decided to make some chicken tacos the other day.  I still had some of this discounted chicken, you see.

And I had some enchilada sauce.  I let the chicken simmer in 1/4 cup of the sauce . . . but what to do with all of that leftover sauce?






 Problem solved!  I ate the tacos with a little bit of goat cheese (1 ounce split between 3 tacos) and shredded spinach.  Delicioso. 

Sorry about the horrific lighting.  I'm not food photographer.  I take pictures with a very used Canon point and shoot and I don't have a light box and if I did, I wouldn't know what to do with it.  Please do not report me to the blogging authorities.
